It was suggested to me this weekend by a very smart woman of my acquaintance that I should have a regular feature on the blog called ‘cocktails on the balcony.’ Really, dear reader, what was I to do with such a suggestion?
I should add that this idea was born whilst in Seattle on a jaunt filled with vegan food, tasty cocktails and a dash of sweaty dancing. Again, I implore you, what was I to do?
Week One: Vegan Cocktails on L’s Balcony.
The ‘It’s So Sunny Out!’
Get a Mason jar, add ice, add all ingredients to a cocktail shaker… er, shake and then pour over ice.
- 1.5oz gin (Bombay Sapphire East – with lemongrass and black pepper – is perfect)
- 0.5oz fresh lime juice (and a quarter lime to garnish)
- 1oz coconut cream
- Sprig of mint from the balcony (or elsewhere, you know)
As musical accompaniment I would heartily suggest some of Joni Mitchell’s ‘The Hissing of Summer Lawns’ and ensure that you have some of Sweet and Sara’s vegan toasted coconut marshmallows. Don some deliciously outsized sunglasses and put your feet up. You deserve it. You’re ace.
Like this cocktail? Let’s see how regular a feature we can make this. <--- bring me liquor.
